The comments by muffin are totally correct. You have to remember your're using wood and not something else. Your oven temperature is easier to control if your stove is comletely warmed. This means baking a couple of hours after you started your fire. No you don't have to do it that way but you'll be more sucessful if you do. How you warm the stove up doesn't matter but once you have a bed of coals use hardwood. You can play around trying to regulate oven temperature without baking anything at first but try something simple and then move on. Now that you have a wood stove you'll be cooking with cast iron on the top and a Dutch oven both on top and in the oven. Great roasts, stews and bake goods. Lucky you.
