Recipe: Polish Prune Soup
SoupsPOLISH PRUNE SOUP
1 quart water
1 cup prunes
1 tbsp. butter or margarine
2 1/4 tbsp. sugar
1/4 tsp. salt
3/4 cup macaroni or home made dumplings
1 1/2 tbsp. vinegar
Bring water to a boil; add the prunes, butter, sugar, and salt. Cook 8 to 10 minutes.
Add macaroni and continue cooking until macaroni is done. Add water, if needed.
After macaroni is done, remove from heat. Add vinegar and stir well. Cover saucepan and let stand a few minutes. This soup is good served warm or cold.
Note that appears with the recipe: This soup recipe was brought from Poland by my grandmother, Mrs. John Kolbachinski Sr. This soup together with sledzie (herring) and brown bread (bread was sliced, then browned on top of a hot stove) was served often during Lent. Men carried this soup in small containers (buckets) to work.

Hello Lee,
While this isn't the exact recipe you described maybe you can experiment by making a beef broth with neckbones as you described and using that in the soup.
Happy Cooking!
