LaDonna,CA (12:46:54) : Cranberry-Pumpkin Bread

4 lg. eggs
3 c sugar
1 c veg. oil
2 c canned pumpkin
1 lb. cranberries, chopped
4 c flour
2 ts. soda
1 ts. bkg. pwd.
1 1/2 ts. salt
1 ts. cinnamon
1 ts. nutmeg
----------------------------------------
beat eggs; gradually add sugar then oil and pumpkin until well blended.
stir together dry ingredients and add to pumpkin mixture.
mix well and add chopped cranberries.
Pour into 3 well greased and floured
8 1/2 x 4 1/2 " loaf pans.
Bake at 350* for @ 1 hour until tests done.
Cool on rack for 10 min.
Turn out of pans an cool completely.
Freezes very well

1 box Rice Chex
12 oz. chocolate chips
1 c. crunchy peanut butter
1/2 lb. powdered sugar

Place cereal in LARGE pan. Melt chips and peanut butter. Gently stir into chex, using powdered sugar, so it doesn't stick. Serve to humans!

Kim,La. (05:02:31) : CREAMY CHEESEY POTATO SOUP

4 c. diced white potatoes
1/2 c. chopped celery
1/4 c. chopped onion
*1/4 c. chopped parsley (or as desired)
4 c. water
1 tsp. salt
1/2 tsp. celery salt
1/8 tsp. freshly ground pepper (or several dashes pepper medley seasoning to taste)
1 c. whole milk
1 c. evaporated or (1 (13 oz.) can of
evaporated milk then measure
enough whole milk to total 2 c. which includes above whole milk)
3 tbsp. butter or margarine
4 oz. of your favorite Cheddar cheese grated
4 to 6 slices of Velveeta cheese or as desired

Combine the vegetables, water and seasonings in a pot and boil until vegetables fare tender, NOT MUSHY. Drain water from potatoes. Add the milk and bring to just under the boiling point. Add the cheeses and butter and stir over a very low heat just until cheeses and butter are melted. Also stir gently as not to mash your potato chunks. Serve garnished with fresh parsley if desired. * 1 level tablespoon of dried parsley is sufficient, unless you really like lots of parsley!
