Hi Everybody!
Lately I have been getting better in the kitchen coming up with 20-25 minute meals. I am at whiz at breakfast with my famous morning potatoes dictating when the rest of the meal will be done. In this case it is the fire-roasted tomatoes. They do take an hour to make in the oven but the rest of the meal is less than 20 minutes! And, well worth it!
Fast and delicious meals are the norm here especially during football season...I try to limit the pizza intake and the "football-type" food and stick with nourishing meals. So 20-25 minute meals are my favorites! Enjoy the season!

THE RECIPES
MEDITERRANEAN PASTA WITH FIRE-ROASTED TOMATOES AND GARLIC
Serves 6
2 lbs. plum tomatoes, halved lengthwise, about 12
1/2 cup olive oil, divided use
3 cloves garlic, minced
1 Tbsp. Italian seasonings
1/2 tsp. crushed red pepper
1/2 tsp. salt
1/4 tsp. black pepper
1 lb. fettuccini noodles, cooked
1 jar Barilla Roasted Garlic Tomato Sauce
Freshly shredded Parmesan cheese
Place tomato halves on a foil-lined cookie sheet, spray with PAM. Mix 1/4 cup olive oil, garlic and seasonings in a small bowl. Mix well and spoon over tomatoes. Drizzle an additional 2 tablespoons olive oil and bake in a 400 degree F oven for 1 hour.
Prepare pasta according to package directions; drain.
Place half tomatoes in a bowl and mash. Add the Barilla tomato sauce and mix well. Add the rest of the tomatoes and pasta and mix well. Toss with fresh shredded Parmesan cheese.
BABY GREENS WITH DICED YELLOW SQUASH, CRANBERIES AND PECANS IN A PEAR GORGONZOLA DRESSING
Serves 2
Baby greens, a handful for each bowl
1 small fresh yellow crookneck squash, diced
1/2 cup garlic croutons
1/4 cup dried cranberries
1/4 cup fresh chopped pecans
1/4 cup Litehouse Brand Pear Gorgonzola Dressing
Mix all ingredients in a bowl and divide into 2 serving bowls.
