2 cups graham cracker crumbs
3 sticks butter
8 ounces cream cheese
2 cups powdered sguar
3-4 bananas
1 large can crushed pineapple
1 large carton Cool Whip
1 small bag of coconut
1 cup chopped pecans

Combine 1 stick of melted butter, graham cracker crumbs, and 2 T. of powdered sugar. Spread in 9X13 pan. Mix 2 sticks of softened butter and cream cheese. Mix for 10 minutes. Add sugar. Spread over graham cracker crumbs. Top with sliced bananas. Add pineapple, coconut, and cover with Cool Whip. Top with pecans and cherries. Refrigerate overnight. 3 1/2 cups sugar
1/2 cup flour
1 cup buttermilk
1 stick butter, softened
6 eggs
1 tsp. vanilla extract
2 8-inch pie shells, unbaked

Beat together all of the above and pour equal amounts into 2 unbaked pie shells. Bake 350 degrees for 30-40 minutes or until firm in the middle.

Yield: 2 pies.

1 8-oz. pkg. cream cheese, softened
3 sticks butter or margarine
3 cups sugar
5 eggs
3 cups flour
1 tsp. vanilla

Grease and flour a tube or bundt pan. Mix top 3 ingredients together, then add 1 egg at a time and bet mixture after each egg is added. Then add remaining ingredients and beat well. Pour into pan and bake for 1 hour at 350 degrees or until cake springs back when lightly touched.

1 unbaked pie crust
3 eggs, beaten
1/2 cup Karo syrup
1/2 cup honey
3/4 cup sugar
2 T. butter, melted
1 tsp. vanilla extract
1 cup pecans, chopped

Combine beaten eggs, syrup, honey, sugar, butter, and vanilla. Beat until well blended. Stir in pecans and pour into pie shel. Bake in oven at 350 for 50 minutes or until it tests done in the middle of the pie. Serves 6-8. Debbie.D.,.AL (12:08:15 PM) : SOUTHERN SWEET POTATO/CHEESE PIE

1/2 cup milk
1/3 cup orange juice
4 cups marshmallows
2 (8 oz.) pkgs. cream cheese
1 cup sweet potatoes
1 tsp. vanilla extract
1/4 tsp. cloves
1/4 tsp. cinnamon
1 cup cream, whipped

Melt marshmallows in milk over low heat; stir until smooth. Chill until cool. Whip potatoes with vanilla, spices, and orange juice. Combine cream cheese (softened) and potato mixture until well blended. Whip in marshmallow mixture. Fold in whipped cream and pour in baked crust. Chill. Keep this in the refrigerator. 1 (3 oz.) pkg. cream cheese, cut in 12 cubes
cinnamon and sugar to garnish
2 cups flour
1/2 cup sugar
3 tsps. baking powder
1 1/2 tsp. pumpkin pie spice
1/2 tsp. salt
1/2 cup chopped pecans
2 eggs, slightly beaten
3/4 cup pumpkin, cooked and mashed
1/2 cup melted butter
1/4 cup sour cream

Combine flour, sugar, baking powder, pumpkin pie spice, salt and pecans. Mix eggs, pumpkin, butter, and sour cream together. Add the egg mixture to the flour mixture, stirring just until moistened.

Fill greased muffin cups 1/3 full. Place a cream cheese cube in center of each. Add remaining batter to fill cups 2/3 cup full. Sprinkle with cinnamon and sugar. Bake in 375 degree oven 18-20 minutes.

Yield: 12 muffins

1 1/3 cup self-rising flour
1 cup chopped pecans
1/2 cup brown sugar
1/2 cup milk
1/4 cup butter, melted
2 eggs
1 tsp. vanilla extract

Combine flour, pecans, and brown sugar in a large mixing bowl. Make a well i the center of the mixture and set aside. Combine milk, butter, eggs, and vanilla; add to dry ingredients, stirring until just moistened. Spoon batter into greased and floured muffin tins, filling 1/2 full. 1/2 Cup chopped walnuts
2 tsp. cinnamon
1 1/2 cups sugar
1/2 cup butter
2 eggs
1 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. baking powder
1 cup sour cream or yogurt
1 med. granny smith apple, peeled and sliced

In a small bowl, mix the nuts, cinnamon and 1/2 cup sugar and set aside.

In a large bowl, cream butter and remaining sugar. Mix well. Beat in the eggs and vanilla. Ina separate bowl, measure flour, soda, salt, and baking powder. Beat dry ingred. into creamed mixture, alternating with sour cream or yogurt. Spread half the batter into a greased 9-inch springform pan. Top with apple slices and half of the walnut mix. Cover with remaining batter. Sprinkle with remaining nut mixture. Bake 375 for 40 mts. Cool before serving. Makes 6-8 servings. Gina,.Fla (4:25:10 PM) : Apple French Toast

1 cup firmly packed brown sugar
1/2 cup butter, melted
2 tablsp. light corn syrup
1 large apple, cored, peeled, anad cup up
1/2 cup cranberries
1 tsp. cinnamon
1 t. nutmeg
3 eggs
1 cup milk
1 tablsp. vanilla
1 day old french bread loaf

In a small saucepan, combine the brown sugar, butter and corn syrup with cinnamon and cook until thick, 2-3 minutes. Pour into an ungreasead 9x13 pan. Arrange the apple bits on top. Slice the French bread into 3/4 inch slices. In a large bowl beat the eggs, milk and vanilla and nutmeg. Dip the bread into the mixture, letting the slices soak for 30 seconds. Arrange on top of the apples. Cover and refrigerate overnight. Bake uncovered 350 for 35-40 mts. AWESOME!!!Debbie.D.,.AL (4:34:46 PM) : ORANGE POUND CAKE

1 cup butter (2 sticks)
2 cups sugar
4 eggs
Pinch salt
Grated orange rind
1 1/2 tsps. vanilla extract
1 cup milk
3 cups all-purpose flour
2 tsps. baking powder

Glaze:
1 cup sugar
1/4 cup butter (1/2 stick)
1/3 cup orange juice

Cream 1 cup of butter with 2 cups of sugar. Add the eggs, salt, orange rind, and vanilla. Add the milk, flour, and baking powder. Pour into a greased 10-inch bundt pan. Bake in a 350 degree oven for 1 hour or until done. As soon as the cake is done, dissolve 1 cup of sugar and 1/4 cup butter in the orange juice and cook about 2 minutes. Pour over the hot cake and let it set until the cake is cool.Debbie.D.,.AL (4:42:21 PM) : BEEF-BARLEY SOUP

2 pounds round steak, cut into small pieces
Small amount of cooking oil
7 cups water
1 16-oz. can tomatoes
2 beef bouillon cubes
1 cup chopped carrots
1 cup chopped celery
1/2 cup chopped green pepper
2/3 cup barley
Parsley
Salt and pepper to taste
1 tsp. basil
1/2 tsp. Worcestershire sauce

In a large skillet, brown the beef in oil. Stir in water, undrained tomatoes, onion, and bouillon cubes. Simmer for 1 1/2 hours. Add carrots, celery, green pepper, carley, and seasonings. Simmer until the vegetables are tender. Serves 6-8. Debbie.D.,.AL (8:32:26 PM) : BREAKFAST CASSEROLE

1 pkg. Canadian bacon--thinly sliced
3-4 large eggs (I used Egg Scramblers)
1 cup milk (I used skim)
3/4 cup cheese(I used low-fat)
1 12 oz. pkg. hash browns, shredded
1/4 cup each of mushrooms, chopped red/green bell pepper, and onions
Salt and pepper

Spray the 9X13 pan with PAM. Spread the potatoes on the bottom of the pan.
Chop the ham. Mix all of the rest of the ingredients together and spread on top of the potatoes. Bake at 375 for 35-40 minutes.

We had this for supper tonight along with English muffins and raspberry preserves and it was luscious!

Debbie.D.,.AL (8:45:28 PM) : BROCCOLI CHEESE SCRAMBLED EGGS

4 eggs, beaten
2 T. milk
Salt and pepper to taste
1 T. butter or margarine
1/2 cup Cheddar cheese, shredded
1/4 cup broccoli, cooked

Mix the eggs with the milk, salt, and pepper. In a frying pan, melt the margarine (or butter) and add the eggs. Add the cheese and broccoli, scramble. Serve while hot. Serves 2.

Debbie.D.,.AL (9:03:26 PM) : BREAKFAST SAUSAGE CASSEROLE

I use Italian sausage for this instead of the regular pork sausage.

1/2 cup butter (1 stick)
1 pound Italian sausage, cooked, drained, and crumbled
6 slices of wheat or white bread, cubed
2 tsps. dried basil (optional)
1/2 cup shredded Cheddar cheese
6 eggs
2 cups milk

Melt the butter in a small pan and pour into a 9X13" pan. Layer half the cubed bread in the buttered baking pan and sprinkle with half of the basil and cheese. Then layer the remaining bread cubes, basil, and cheese. Sprinkle the browned sausage over all. Beat the eggs well and add the milk. POur over the contenets of the baking pan. Bake in a 350 degree oven for 1/2 hour or until set. Cut into squares and serve. Serves 6-8.

3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 T. cinnamon
2 cups sugar
4 eggs, beaten
2 cups frozen strawberries, thawed
1 1/2 cups cooking coil
1 1/4 cups chopped pecans

Sift the dry ingredients together. Combine the eggs, strawberries, and oil and add to the dry ingredients. Add pecans. Bake in a 325 degree oven for about 1 hour. Makes 4 small or 2 large loaves.

1 cup whole wheat flour
1 cup all-purpose flour
1 1/2 tsps. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1 egg
2/3 cup brown sugar
3/4 cup buttermilk
1/4 cup corn oil
1/2 tsp. almond extract
1 cup diced fresh peaches

Spray a muffin pan with PAM. Set aside. In a medium bowl, combine the flours, baking powder, soda, and cinnamon. Mix well. In a large bowl, beat the egg lightly. Stir in the born sugar, buttermilk, oil, and almond extract. Blend well. Add the flour mixture and gently fold together until the dry ingredients are moistened. Gently fold in peaches. Fill muffin cups 3/4 full. Bake in a 375 degree oven for 20-25 minutes or until toothpick inserted in cener comes out clean. Serve warm. Makes 1 dozen muffins.

This is great to have your first night out. You can even assemble them before leaving home and stick them in your cooler. These are also fun to make with a group because everyone can make their own.

2 pounds ground beef, uncooked
1 onion, chopped or sliced
1 green pepper, chopped or sliced
3 carrots, sliced
3 stalks celery, sliced
3 potatoes, thinly sliced
1 cup mushrooms, sliced
salt and pepper
seasoning of choice
2 tablespoons water
heavy duty foil

Place 6 large rectangles of foil in front of you. In the middle of each, crumble one third of a pound of uncooked ground beef. Top each with desired amounts of the above vegetables and seasonings. Sprinkle each dinner with 1 teaspoon of water. Bring the edges of the foil together and fold. Roll (or fold ) each end, pinching to seal. (Or, you can bring all of the edges up and twist together, like a large Hershey's kiss.)

Place dinners on hot coals (not flames) for about 20 minutes, checking occasionally for doneness. Add ketchup or your favorite BBQ sauce and eat right out of the foil.

Tip: To keep track of whose is whose, put each person's initials on the foil using fingernail polish. It turns black, but won't burn off.
