Recipe: Beer Cheese (using cheddar and blue cheese)

Appetizers and Snacks
BEER CHEESE

Beer cheese is an easy and distinctive cheese spread that became famous as bar food in Kentucky. It's not subtle: serve it with stronger flavors, like rustic wheat crackers or party rye bread.

1 pound sharp Cheddar cheese, shredded
1 cup beer
4 ounces blue cheese
1/2 cup butter, softened
2 tablespoons Worcestershire sauce
1 clove garlic
2 teaspoons wine vinegar
1 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon cayenne pepper, or to taste

Combine all ingredients and blend in a blender 1/2-batch at a time or in a food processor all at once. Should be very smooth.

Makes 2 to 3 cups
