CHERRY WOOD FIRE RIBEYE STEAK
"This recipe for Rib Eyes also works well on New York cut steaks, Elk steaks, Venison and Moose steaks. You do not need to own a wood fired oven to make this recipe. These steaks can be cooked over lump charcoal or an open wood fire. It is a great recipe for camping. I encourage you to try this recipe this summer."

4 choice or prime rib eye steaks
Salt and pepper, to taste
Extra virgin olive oil
1 pound mushrooms, sliced
1 yellow onion, diced
Season steaks generously with salt and pepper and drizzle with extra virgin olive oil. Place on a heatproof wire mesh cooling rack. Bring steaks to room temperature.
Build fire in wood fire oven. Use only dry, cured and seasoned cherry wood to start your fire.
Cook mushroom and onion in a cast iron skillet the wood oven until all of the water is sweated out. Once the moisture is out of the mushrooms and onions, add olive oil to the pan and season with salt and pepper. Saute the mushroom and onions until caramelized. Set aside.
When the wood has burned down to white hot coals it is time to cook the steaks.
Make a bed of white hot coals. Place the rack with the steaks directly on the coals. Sear steak for about 2 minutes; take out and turn over on rack. Place the rack with the steaks back on coals and sear for another 2 more minutes. Remove the steaks after they have seared on both side.
Push all of the coals to one side of the oven. Place rack with steaks on oven floor. Cook steaks for another 2 minutes or until your desired temperature. Let steaks rest for 10 minutes.
Top steaks with mushroom and onion mixture and serve with a bold red wine!
