1 lb. ground chuck
1 small onion, chopped
1 green/red pepper, chopped
1 grated carrot
1 clove garlic, minced
1 1/2 cups rice (cooked)
salt and pepper to taste
Soy sauce

Brown hamburger in a skillet adding the vegetables. Cook until hamburger is done. Drain the fat from the hamburger/vegetable mixture. Add the rice to the hamburger mixture. Serve with soy sauce.

2 lbs. ground chuck
1 2/3 cup evaporated milk
1 pkg. (2 envelopes) Lipton Onion Soup Mix

Preheat oven to 350. Mix the meatloaf ingredients well in a 2 1/2 quart bowl. Put mixture into an ungreased shallow baking pan. With wet hands, shape the mixture into a loaf. Bake for 1 hour or until meatloaf is done.

1 pound ground chuck
1/4 cup fine dry bread crumbs
1/4 cup minced onions
1 egg, slightly beaten
1/4 tsp. salt
1/2 tsp. minced garlic
2 T. chopped fresh parsley
1 can Campbell's Cream of Mushroom, Cream of Chicken, or Golden Mushroom Soup
1/2 cup water

Mix beef, crumbs, onion, egg, salt, garlic, and shape into 16 meatballs. Brown meatballs, pour off fat. Stir in soup, water, and parsley. Cover. Cook over low heat for 15 minutes. Stir occasionally. Serve over rice, noodles, or mashed potatoes. Comfort food at its best!Dawn.NY (01:25:00) : ROYAL BEEF BOURGUIGNON

2 lb Top round steak; 2" cubes
2 tb Butter or margarine; melted
3 tb All-purpose flour
1/2 c Dry sherry
5 slices Bacon
24 small Onions; peeled; about 1 lb.
1 lb Mushrooms; small, fresh
3/4 c Consomm ; undiluted
1/4 c Water
1 c Burgundy
2 tb Tomato paste
2 Bay leaves
pinch Chives; frozen, chopped
pinch Thyme; dried
pinch Tarragon; dried
pinch Parsley; chopped

Brown steak in butter in a heavy Dutch oven. Combine flour and sherry, stirring until well blended; stir into Dutch oven.

Cook bacon until crisp; drain, reserving drippings. Crumble bacon, and add to steak.

Saut onions in bacon drippings until tender; remove with a slotted spoon, and add to steak. Saut mushrooms in remaining bacon drippings; drain well, and set aside.

Add remaining ingredients, except mushrooms, to steak; cover and simmer over low heat 1-1/2 hours. Add mushrooms; cover and simmer an additional 30 minutes.Dawn.NY (01:20:58) : REUBEN CASSEROLE (microwave)

2 c Swiss cheese; shredded
1/2 c Mayonnaise
1 c Sauerkraut; rinsed & drained
2 ts Butter
1 c Corned beef; chopped, 12 oz
1/4 c Thousand island dressing
2 Tomatoes; sliced (optional)
1 Green pepper; cut in rings
1/4 c Bread crumbs

Put sauerkraut in buttered 1 1/2 casserole dish. Top with corned beef, broken into bits, then cheese. Combine mayonnaise and Thousand Island dressing (or substitute made with mayo, ketchup and relish) to equal 3/4 cup ) and spread over cheese.

Top with tomatoes or green pepper. Melt butter in microwave and blend with bread crumbs, spread over top. Cook 12 minutes on HIGH (100%).Amy/MA (01:06:26) : This is our version of mac and cheese, we are addicted to Gorgonzola. I just sort of eye measurements...

Tortellini with gorgonzola Cheese sauce

1 pkg frozen Cheese tortellini
4 oz crumbled gorgonzola
olive oil ( about 1 TBSP)
milk (about 2 TBSP)
ground nutmeg

Cook Tortellini according to package,
When it is 1/2 way done, put cheese in a sauce pan, add a little oil and a little milk, heat until it is a sauce, do not use too much milk or oil or it will be too liquidy, if so, just add more cheese.

Pour sauce on top of tortellini and sprinkle nutmeg over it.
Sometimes we chop up tomatoes and throw them in the sauce too...BB,.Calif (01:02:01) :

Pot Roast Chicken

6 Shallots
4 Carrots -- peeled, and
cut into strips
3 Celery stalks -- sliced
2 Bay leaves
Salt -- to taste
Freshly-ground black pepper -- to taste
1 Lemon -- sliced
Tarragon sprigs
1 whole Chicken - (3 lbs)
3/4 cup White wine
1 1/4 cups Chicken stock
2 tablespoons Butter
1/4 cup Flour
3 tablespoons Sour cream or plain yogurt

Preheat the oven to 375 degrees.
Put the shallots, carrots, celery, and bay leaves together with seasoning in a large casserole dish. Rinse the chicken, pat dry, and place the lemon and tarragon in the cavity. Position on top of the vegetables, and pour the wine and stock over the top. Cover and cook in the oven for 1 3/4 to 2 hours, or until cooked. Remove lid for last 20 minutes. Beat the butter and flour together, then whisk small spoonfuls into the boiling liquor. Cook until thickened, stir in sour cream or yogurt, and serve with the chicken.

Slow-Cooker Beef and Bean Burritos
Yield: 12 servings

1 (2-pound) London broil
1 (1.25-ounce) package taco seasoning mix
Cooking spray
1 cup chopped onion
1 tablespoon white vinegar
1 (4.5-ounce) can chopped green chiles
1 (16-ounce) can fat-free refried beans
12 (8-inch) fat-free flour tortillas
1-1/2 cups (6 ounces) shredded Monterey Jack cheese
1-1/2 cups chopped plum tomato
3/4 cup fat-free sour cream

1. Trim fat from meat; rub seasoning mix over both sides of meat. Place meat in an electric slow cooker coated with cooking spray; add onion, vinegar, and green chiles. Cover with lid; cook on low-heat setting for 9 hours. Remove meat from slow cooker, reserving cooking liquid; shred meat with two forks.
Combine meat and reserved cooking liquid; stir well.

2. Warm beans and tortillas according to package directions. Spread 2 tablespoons beans down the center of each tortilla. Spoon a heaping 1/3 cup meat mixture on top of beans. Top each with 2 tablespoons cheese, 2 tablespoons tomato, and 1 tablespoon sour cream; roll up. Yield: 12 servings. Terrytx (10:04:36) :

Low Fat Turkey Chili

1 pound 99% fat free ground turkey
1 medium onion -- chopped
3 cloves garlic -- minced
1 jalapeno -- seeded and chopped
1 tablespoon olive oil or cooking spray
2 cans (15-1/2 oz each) Great Northern
or Navy beans -- undrained
1 can (4 oz) chopped green chiles
2 teaspoons ground cumin
1 teaspoon ground oregano
1/4 teaspoon cayenne
2 tablespoons chopped fresh cilantro
juice of 1/2 lime
2 corn tortillas -- torn in small pieces
salt and pepper to taste
1 container (32 oz) 99% fat free chicken broth

Condiments
chopped avocado
chopped tomato
chopped cilantro
chopped onion
shredded reduced fat Monterey Jack cheese
fat free sour cream
baked or "WOW" fat free tortilla chips

In a soup pot or Dutch oven, saut onion, garlic and jalapeno in olive oil or cooking spray until tender. Add ground turkey and continue cooking until turkey is no longer pink. Add remaining ingred., except condiments, and bring to a boil. Reduce heat and simmer, uncovered, until desired consistency, about 1 hour. Serve along side bowls of condiments. Terrytx (10:03:51) :

Colorado Tamale Casserole

12 Johnson's Colorado tamales
2 cans Swanson's Chicken Ala King
1 large can evaporated milk
1 can chopped green chiles
grate

Lightly grease a 9x13 pan. Put unwrapped tamales on the bottom. Mix together remaining ingred. except cheese. Pour over tamales. Top with cheese. Bake at 350 for 30 min.

NOTES : If you can't find the Johnson's Colorado Tamales, use homemade or whatever you can find, but the Johnson's tamales are very good.
