Recipe: Cream of Avocado Soup with Condiments (blender, make ahead)
SoupsCREAM OF AVOCADO SOUP WITH CONDIMENTS
FOR THE SOUP:
Pulp of 1 to 2 small, ripe avocados
2 cups well-seasoned chicken broth
5 teaspoons red wine vinegar
2 tablespoons fresh lemon juice
1 1/2 teaspoons garlic salt or 1 clove garlic, pressed
3 to 4 dashes hot sauce, such as Tabasco
1 cup heavy cream or half-and-half
FOR THE CONDIMENTS:
8 to 10 slices crisp bacon, finely crumbled
3/4 cup chopped toasted almonds
2 fresh tomatoes, peeled, seeded and diced
1/3 cup sliced green onions or 1/4 cup minced chives
Place all soup ingredients in blender and blend until smooth. Chill.
Serve in chilled bowls. Either sprinkle each with condiments or allow guests to help themselves. For a picnic, place in plastic container (a plastic pitcher will serve, if you have one that has a lid that seals well). Store in ice chest. Be sure to pack soup spoons and a ladle (unless you're pouring from a pitcher).
This soup will keep in refrigerator 24 hours without darkening. It may also be frozen, in which case it is best to reblend it when partially thawed.
