Recipe: Low Carb Italian Wedding Soup (using Italian sausage and kale)

LOW-CARB ITALIAN WEDDING SOUP

1/2 pound Italian sausage, casing removed
1 small onion, diced
2 cloves garlic, pressed
2 cups kale, chopped
1 (14 1/2 ounce) can chicken broth
2 zucchini, chopped
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/2 teaspoon salt
Dash crushed red-pepper flakes to taste

In a large heavy saucepan brown sausage over medium-high heat.

Stir in onion and garlic; cook and stir until soft, about 2 minutes.

Now add the kale and cook another 3 minutes.

Stir in remaining ingredients; bring to a boil, lower heat, and simmer for about 8 to 10 minutes. Soup should be quite thick.

LOW CARB SERVING SUGGESTIONS:Serve with a big green salad. Top soup with grated Romano cheese.

Makes 4 servings
