1/2 cup (2 sticks) butter
8 oz. cream cheese
2 cups flour
Cream together butter and cream cheese. Add flour and then divide into 48 balls. Place in mini muffin tins and shape to line the cups. Set aside.
FILLING:
1/2 cup butter
1/2 cup sugar
1 (8 oz.) can almond paste
2 eggs
1 tbsp. almond extract (optional - can also use less)
Cream butter and sugar. Break almond paste into bowl and mix thoroughly. Add eggs and beat until light and fluffy. Fill pastry cups 1/2 full.
Bake 10-15 minutes in preheated 400 degree F oven. Cool and remove from pan. Filling will make about 36 or 40. Leftover cups freeze well and can be used for canapes, etc.

CLINTON'S CHOCOLATE CHIPS
1 1/2 c unsifted all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 cup solid vegetable shortening
1 cup light brown sugar, firmly packed
1/2 c granulated sugar
1 tsp. vanilla
2 eggs
2 c. old-fashioned rolled oats
12 oz. semi-sweet chocolate chips
Preheat oven to 350 degrees F. Grease baking sheets.
Combine flour, salt, and baking soda in a mixing bowl. In a separate bowl, beat together the shortening, brown sugar, granulated sugar, and vanilla until creamy.
Add the eggs and beat until light and fluffy. Gradually beat in the flour mixture and rolled oats. Stir in the chocolate chips. Drop batter by well-rounded teaspoonfuls onto greased baking sheets.
Bake 8-10 minutes or until golden brown. Cool cookies on sheets on a wire rack for two minutes. Remove cookies to wire rack to cool completely.
ANN LANDERS POUND CAKE
3 sticks margarine
3 c. sugar
5 lg. eggs
3 c. plain flour
1 tsp. vanilla extract
1/2 tsp. lemon flavor or
1 tsp. grated lemon peel
1/2 tsp. almond extract
7/8 c. ginger ale or similar soda
Cream margarine until light, cream in sugar and beat until fluffy.
Beat in eggs, one at a time.
Beat in 1 cup flour, then add extracts and a little ginger ale. Continue adding flour, alternating with ginger ale until you use all. Beat until smooth.
Pour batter into two greased and floured 9 x 5 loaf pans or one 10-inch tube pan.
Bake in preheated 275 degree F oven for one hour and 45 minutes, until knife inserted into cake comes out clean or cake shrinks from pan.
