Recipe(tried): Fantabulous Spring Salad

This is a long time family favorite. I hope u enjoy it as much as my family does. This recipe makes a very very large salad, great for cookouts or get togethers.

Fantabulous Spring Salad w/Dressing

1 H Iceburg lettuce, shredded
1 H Romain lettuce, shredded
1 H Purple cabbage, shredded
5 Green Onions, chopped
5 large tomatoes, diced
5 carrots, tops removed and thinly sliced
3 large cucumbers, sliced
1 large green pepper, coarsely chopped
1 large red bell pepper, coarsely chopped
2 c bean sprouts
3 TBSP parsley flakes
1 c thinly sliced chestnuts
1 c chunky pineapple, drained and patted dry
5 c seasoned croutons
1 c shredded cheese
1/2 c parmesan cheese

In a very large bowl, toss all ingredients, place in the fridge until ready for use.

Dressing

1.5 c mayonaise
3 TBSP white vinegar
1/4 c milk, any grade
1 tsp cilantro (optional)
1 TBSP parsley flakes
1/4 c sugar

Combine all ingredients and mix well w a mixer. Drizzle sparingly over salad, toss salad and serve.
