This recipe is from my family and a typical Rhinish recipe. In Germany they call it D bbekoche (Potcake) enjoy
15 large potatoes, peeled
1 large onion, peeled
bacon strips
sausage links
dash of nutmeg
salt and pepper
Using a fine grater, grate the potatoes and onion in a large bowl. Drain the potato-onion mixture to remove the water and starch that builds up in the bottom of the bowl.
Stir in bacon strips (plenty), some sausage links (not hot links as they will alter the taste), a dash of nutmeg, salt and pepper. Stir it all up. Place in an oven casserole.
Bake at 300F for 1 1/2 hours or until top crust is almost deep brown. To test for doneness, stick a fork in the middle of the casserole. When the fork stands straight up the potato cake is done.
