Recipe: Hearty Grain Quick Loaf (8-inch round, using whole wheat flour and oats)

"This recipe makes a lovely round loaf of wholesome bread. It's
delicious to serve with a meal or just as a snack with milk."
2 cups all-purpose flour
1 cup whole wheat flour
1/2 cup plus 1 to 2 tablespoons quick-cooking rolled oats, uncooked, divided use
1/4 cup sugar
3 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups 2% milk
3 tablespoons oil
1 egg
Heat oven to 350 degrees F. Grease bottom only of 8-inch round cake pan.
In large bowl, combine all purpose flour, whole wheat flour, 1/2 cup oats, sugar, baking powder and salt; mix well.
In small bowl, combine milk, oil and egg; beat well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. Spread dough in greased pan. Sprinkle with the remaining 1 to 2 tablespoons oats.
Bake at 350 degrees F for 42 to 47 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Serve warm.
Makes 1 (16-slice) loaf
