CHOCOLATE CHOCOLATE CHIP MUFFINS
6 oz semi-sweet chocolate
1/3 cup lightly salted butter
3/4 cup buttermilk
1/2 cup sugar
1 egg, lightly beaten
1 1/2 tsp vanilla extract or rum
1 2/3 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup semi-sweet chocolate chips
Preheat oven to 400 degrees F. Grease muffin cups.
In saucepan melt chocolate with butter over low heat. Remove from heat; let stand for about 10 minutes; until cooled.
In a small bowl; stir chocolate mixture with buttermilk; sugar; egg and vanilla until well blended.
In a large bowl stir together flour; baking soda and salt. Make a well in the center of the dry ingredients; add chocolate mixture and stir just to combine. Stir in chips. Spoon batter into prepared muffin cups.
Bake 20 to 25 minutes or until a cake tester inserted in the middle of the muffins comes out clean. Remove muffins to a wire rack to cool. Serve warm.
Makes about 12 muffins
