Recipe(tried): Homemade chocolate

Commercial chocolate melts are usually quite expensive: have you considered generic or store-brand cooking chocolate? Any of the "quick", "easy" or "simple" fudge recipes, even if they include chocolate, stretches the amount of confectionay produced and could be more cost effective than just straight chocolate/chocolate melts.

From The Cook's Thesaurus:
One ounce of unsweetened baking chocolate = 3 tablespoons cocoa plus 1 tablespoon butter or oil

semi-sweet chocolate = semisweet chocolate Equivalents: 1 tablespoon unsweetened cocoa + 1 tablespoon sugar + 1 teaspoon unsalted butter or vegetable oil (may leave a powdery taste)

sweet chocolate = sweet dark chocolate = sweet baking chocolate Equivalents: 1 ounce sweet chocolate = 1 tablespoon unsweetened cocoa + 4 teaspoons sugar + 2 teaspoons unsalted butter (may leave a powdery taste.)

unsweetened chocolate = bitter chocolate = baking chocolate = pure chocolate = chocolate liquor Equivalents: One ounce unsweetened chocolate = 3 tablespoons unsweetened cocoa plus 1 tablespoon unsalted butter or margarine or shortening or vegetable oil. ( may leave a powdery taste.) OR 3 tablespoons carob powder + 2 tablespoons water + 1 tablespoon butter or margarine or vegetable oil (lower oven temperature by 25 degrees)

Fruit and Nut Chocolate - old country recipe
2 c full cream powdered milk
2 tablespoons cocoa powder
1 cup copha
1/2 c sultanas
1/2 c chopped nuts
sweetener to taste
Melt copha, then mix in remaining ingredients. Spread into a flat tin and chill until set.
Notes:
* white shortening can be used instead of copha (solidified coconut oil)
* sultanas = golden raisins, OR chopped dried apricots or other dried fruits
* nuts can be finely od coarse chopped - or even whole

Easy Fudge
14 oz sweetened condensed milk
18 oz. semi-sweet chocolate chips
Dash of salt
1/2 cup chopped nuts, optional
1 1/2 tsp. vanilla extract
In microwave, heat sweetened condensed milk to just below boiling - use large container in case of spill-overs. Remove; stir in chocolate and vanilla, then nuts if desired. Spread evenly into lined shallow square pan. Chill until firm.

Easy Peanut Butter Fudge
2 cups sugar
1/2 cup milk
1/4 cup margarine or butter
1 cup peanut butter
1 teaspoon vanilla
1/2 cup cocoa (optional)
Combine sugar, milk and margarine in large container. Microwave until it boils. Remove and stir in peanut butter, vanilla and cocoa. Beat until thick, then pour into buttered square dish.

Quick Fudge
1/2 cup butter
1/4 cup milk
1 Tablespoon vanilla
1 lb. powdered sugar
1/2 cup cocoa
Microwave milk and butter on high until just below boiling. Stir in cocoa and powdered sugar. Mix well. Stir in vanilla. Pour into an 8x8x2 baking dish. Refrigerate until set.
