Recipe: Kona Coffee Chili (using V-8 juice, brown rice, and salsa)

KONA COFFEE CHILI

1 lb ground beef
1 medium onion, chopped fine
1 green pepper, chopped fine
4 cups V-8 juice
2 cups prepared Kona coffee
2 cups water
1/2 cup whole-grain brown rice
2 tbsp chili powder
3 tbsp brown sugar
1 cup salsa

Brown the meat and drain off any grease.

In a large pot, combine meat and all other ingredients. Bring to a boil and lower heat. Simmer for 1 hour.

Serve piping hot.

Servings: 4
