Recipe(tried): MED - Scones & Truffles

Desserts - Candy, Chocolate

Here is the Scones recipe I used.

Scrumptious Scones

2-1/4 c. all purpose flour
2 Tbs. granulated sugar
2-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. cold buter, cubed
1 c. buttermilk
1 egg, lightly beaten

Combine flour, sugar, baking powder, soda and salt. (I did the whole process with great results in my Kitchen Aid Mixer with the regular paddle - not the dough hook. It worked better). Add cold cubed butter. Combine until mixture looks like small peas. Do Not Overmix!! (This could, of course, also be done by hand)

Add the buttermilk and mix quickly until the flour mixture is completely moistened. Put the dough on a lightly floured surface and knead about 10 times. Do Not overknead. The scones will be tough.

Roll the dough out until it's about 3/4 in. thick into a circle and cut into 12 wedges (you may also use a round cookie cutter, but be sure to cut straight into the dough - don't twist cutter)

With a pastry brush, brush tops and sides of scones with egg.

Place on ungreased cookie sheets (or baking stones) and bake 12 to 15 min. at 425 .

For the cream to go on them I used this recipe:

1/2 pt. whipping cream
3 Tbs. confectioner's sugar
1 Tbs. sour cream (do not use fat free sour cream)

Whip all ingredients together until still. Refrigerate til ready to use.
