Recipe(tried): Fudge Recipes (without butter) - White Confetti Fudge, Chocolate Peanut Butter Chip Fudge, and Orange Fudge

These recipes may help you or not, depending on your reason for avoiding butter. If you want to avoid dairy or to make a low-fat fudge, they won't be of use to you.

I have made the first two recipes, but not the Orange Fudge.


WHITE CONFETTI FUDGE

1 1/2 pounds white chocolate
1 can sweetened condensed milk
1 cup chopped candied cherries*
1 teaspoon vanilla
1/8 teaspoon of salt

Line an 8-inch square pan with waxed paper.

In a heavy saucepan over low heat, melt white chocolate along with 1 can of sweetened condensed milk; remove from heat.

Stir in candied cherries, vanilla, and salt. Spread evenly in prepared pan. Chill for 2 or 3 hours till set.

Cut and store covered in refrigerator.

*When I make the White Confetti Fudge at Christmastime, I divide the recipe into halves, and stir red candied cherries into one, and green cherries into the other. (Combining the two colors into the whole batch didn't look nice, in my opinion.)


CHOCOLATE PEANUT BUTTER CHIP FUDGE

2 cups semi-sweet chocolate chips
1 can sweetened condensed milk (such as Eagle Brand)
1 teaspoon vanilla
Dash salt
1 cup peanut butter chips

Line an 8-inch square pan with foil.

In heavy saucepan over low heat, melt chocolate chips with sweetened condensed milk, vanilla, and salt; blend well. Remove from heat.

Add peanut butter chips; stir just to distribute chips throughout mixture, but not to melt. Spread evenly into prepared pan. Refrigerate 2 hours or until firm.

Remove from pan and peel off foil. Cut into squares and store tightly covered in refrigerator.


ORANGE FUDGE

2 pounds white chocolate, melted
2 pkg. (8 oz each) cream cheese, softened
6 cups confectioners' sugar
1 tablespoon orange extract*

Beat cream cheese into melted chocolate until well blended.

Beat in confectioners' sugar until mixture is smooth.

Stir in orange extract. Spread in an 8-inch square pan and let set before cutting into squares.

Store in refrigerator.

*If I were to try this recipe, I would stir in some grated orange zest for added orange flavor.
