MIXER BATTER BUNS
1 1/4 cups warm water
2 packages active dry yeast
1/4 cup sugar
1 teaspoon salt
1/2 cup shortening
2 eggs
3 1/4 cups flour
Combine 1 1/4 cups warm water and yeast to dissolve.
Add sugar, salt, shortening, eggs and 2 cups flour. Beat on low speed to combine ingredients. Increase mixing speed to medium and beat 2 minutes more.
Add remaining 1 1/4 cups flour and beat with rubber spatula until smooth.
Spoon into greased muffin cups filling cups half full. Let rise 30 to 40 minutes.
Bake until golden brown, about 18 to 20 minutes.
Makes 2 1/2 dozen buns.
