NANA'S SPECIAL ZUCCHINI BREAD
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt (heaping)
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg (scant)
3 teaspoons vanilla
1 cup sugar
1 cup finely shredded unpeeled zucchini
1/4 cup cooking oil
1 egg
1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees F. Grease an 8-inch loaf pan.
Combine flour, nutmeg, baking soda, cinnamon, salt and baking powder in a mixing bowl.
In another mixing bowl, combine sugar shredded zucchini, oil egg and vanilla. Mix well and then add to flour mixture. Stir until just combined (don't overmix!) Stir in nuts if you're using them. Pour the batter into prepared pan.
Bake for 55 to 60 minutes or till a toothpick inserted in the center comes out clean. Cool for 10 minutes on a wire baking rack.
Remove bread from pan. Cool thoroughly on wire rack, and then wrap it and store it overnight for cleaner slicing, or devour it warm and crumbly like Zachary and Nana did!
Makes one loaf, about 16 servings
