I have two recipes for Bourbon Chicken, similar to what is served in the mall food courts. However, these are more similar to the Cajun and Grill New Orleans style Bourbon Chicken, than being Chinese in style.
This first recipe does not have ANY bourbon in it. It gets it's name from having originated on Bourbon Street in New Orleans.
Bourbon Chicken
2 lbs boneless chicken breast-cut into bite size pieces
1-2 TBS olive oil
1 clove garlic crushed
1/4 tsp ginger
1/2 tsp crushed red pepper
1/4 cup apple juice
1/3 cup firmly packed light brown sugar
2 TBS ketchup
1 TBS cider vinegar
1/2 cup water
1/3 cup soy sauce
1 TBS corn starch
1 TBS water
Heat oil in large pot then add chicken pieces and lightly brown for about 6-7 minutes. Remove chicken from pot and put aside. Now add the garlic, ginger, crushed red pepper, apple juice, brown sugar, ketchup, cider vinegr, water, and soy sauce to pot and heat over med heat until dissolved. Add chicken, bring to a boil and then simmer for about 20 minutes. In a small bowl mix corn starch and water and add to chicken and sauce just before serving to thicken. Serve over rice.

Meddle thee not in the affairs of Dragons, for thou art crunchy and wouldst be tasty with ketchup.
