No Egg, No Oil Caesar Salad

4 cloves garlic
1/4 cup low-fat yogurt
1 tsp. anchovy paste OR 1 anchovy, mashed
1 tbsp. Worcestershire sauce
1 tsp lemon juice (fresh)
1 tsp. balsamic vinegar
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup grated parmesan cheese
1 large head romaine lettuce
1 cup croutons (optional)

In blender or food processor, blend the first 8 ingredients plus 2 tbsp. of the parmesan cheese. Tear lettuce and place in bowl. Add the dressing & remaining paresan cheese. & toss well. Add croutons (if using) & more fresly ground pepper to taste.

VARIATION: This dressing can be used as a marinade for grilled chicken or fish.From: What's for Dinner Cookbook & Show by Ken Kostick
