OVEN BARBECUED CHICKEN
This chicken is baked with a homemade barbecue sauce.
2 tablespoons vegetable oil
3 to 4 pounds chicken pieces
1/2 cup chopped onion
3 tablespoons butter
3/4 cup ketchup
1/3 cup vinegar
3 tablespoons brown sugar
1/4 cup water
2 teaspoons prepared mustard
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon pepper
In a large skillet over medium heat; heat oil. Fry chicken until browned.
Drain off fat and place chicken in a roasting pan or baking dish 13x9x2-inches in size.
In a saucepan, melt the butter; saut chopped onion until tender. Add remaining ingredients. Reduce heat and simmer for 10 to 15 minutes.
Pour sauce over chicken and bake at 350 degrees F for 1 hour, or until chicken is tender and juices run clear. Baste occasionally.
Servings: 4 to 6
