ITALIAN RAISIN BREAD
2 pkgs yeast
1/4 cup lukewarm water
8 eggs
1/2 cup oil
1 cup sugar
4 tsp vanilla
1 tsp salt
10 to 12 cups flour
3 cups lukewarm milk
1 cup raisins
Dissolve the yeast in 1/4 cup lukewarm water
Beat eggs and oil together. Add sugar, vanilla and salt; beat well.
Place the flour in a large bowl; make a well in the flour. Add the yeast mixture, egg mixture, lukewarm milk and raisins; mix well. Place dough in a greased bowl, cover loosely and let rise until doubled in size.
Punch down. Shape and place in greased bread pans; let rise.
Bake at 400 degrees F for 20 to 30 minutes (depending on size of loaves).
