Recipe: Pickled Onions

These sound so good!Havent made them yet.
Pickled Onions Makes about 4 pints
3lbs.small white onions
1/2c.salt
1 or more red chili peppers,seeded & quartered
1/2tsp.peppercorns
4 slices fresh ginger
1/4 to 1&1/2c.sugar(amount depends on whether cocktail onions or sweet onions are desired)
3 pints white vinegar
Place the unpeeled onions in boiling water to cover & let stand 2 minutes.Drain,cover with cold water & peel.
Dissolve the salt in 1 quart water in an enamel,steel or earthenware container.Add the onions & enough additional water to cover.Let stand overnight.Rinse in cold water & drain.
Heat to boiling enough water to cover the onions.Add the onions & cook 1 minute.Drain & arrange in hot clean jars in layers with peppers,peppercorns & ginger.
Bring the sugar & vinegar to a boil & pour over the onions to within 1/2 inch of the top of the jar check for air bubbles.Seal.
