Puree of Fresh Pea Soup

Recipe By : Peas by the Bushel and the Peck Beatrice H. Comas
Serves 4

2 cups fresh shelled peas
2 cups chicken broth
salt and pepper
nutmeg
1 cup half and half
2 tablespoons butter or margarine

Cook peas in rapidly boiling water for 3 to 4 minutes. Drin. Place peas in food processor or blender. Puree. Turn into saucepan. Stir in the broth. Season with salt and pepper to taste and a few gratings of nutmeg.

Cook over low heat until well blended. Stir in half and half. Stir over low heat heat until piping hot. Swirl in butter. Cook for 1-2 minutes, blending well. Add a few whole peas and a pinch of chervil to each bowl, if desired.
