1 lb. Raclette cheese
freshly ground pepper or Paprika
hot cooked potatoes, dill pickles, cocktail onions (optional)
Preheat the oven to 375 F.
With sharp knife, cut rind from cheese; cut cheese into thin slices. In shallow baking dish, place one half of cheese slices, overlapping them slightly.
Bake in oven until cheese is just melted and smooth, about 4 or 6 minutes; remove from oven. Place hot dish on serving plate or wooden serving board.
Sprinkle cheese with pepper or paprika. Let each person help himself to a serving of Raclette; eat as is or over hot boiled potatoes; accompany with dill pickles & cocktail onions, if you like.
Repeat the process with the rest of the cheese.
