Recipe: Homemade Egg Noodles for Your Freezer (1970's)

NOODLES FOR YOUR FREEZER

12 eggs
6 cups sifted flour (or as needed)
1 teaspoon salt
Few drops of yellow food color (optional)

Stir eggs but do not beat, add enough flour to make a stiff dough. To 12 eggs it will take about 6 cups sifted flour. Add food color, if desired.

Roll out on floured board and roll and cut thin. Spread out on wax paper to dry.

Put dried noodles in plastic bags and into your freezer. These will stay good for months - if they last that long.

To use, do not thaw, just drop into boiling beef or chicken broth and cook about 10 minutes.
