Hi Scarlett and welcome to TKL, we ate this pie at Das Dutchman Essenhaus Restaurant in the Amish country in Middlebury, Indiana and fell in love with it. They don't give out the recipe, but they do sell a cookbook with the recipe in it. I bought the book but haven't made the pie yet.
RASPBERRY CREAM PIE
Recipe for 2 pies
3/4 cup water
1/2 cup sugar
Heat together and while this is boiling, mix together the following ingredients and add.
1 heaping Tbsp. jell starch or 1 level Tbsp. cornstarch
pinch salt
1/4 cup water
1/4 tsp. lemon juice
Boil together until mixture is clear. Add 4 oz. raspberry jello.
Stir until the jello is well dissolved. Cool and add 2 cups fresh red raspberries.
In bottom of each baked 9" pie crust, put 2 cups of cooled vanilla pie filling (not instant). Place 1 cup raspberry pudding on top of the pie filling and top with whipped cream.
