Hi Gwendolyn,

Well, Sweet Potato Pie would be my first thought, but since they are leftover from a Cuban meal, I'm not sure if the potatoes have a savory seasoning so we probably should stay away from using them in dessert recipes. And, since you say your family doesn't care for sweet potatoes, you'll probably need to disquise them a little. Here are some other options for you to try:
