Recipe: Salmon Patties

Hi Tinker Boos Brought back memories. My Mum used to make the salmon patties below, we use to have them when my Dad worked nights as he was a Steak, potatoes and veg man.
4 large potatoes 425g tin Salmon 1 tab chopped parsley good squeeze lemon juice 1 tspn salt cayenne(opt) 1 egg egg and breadcrumbs
Boil and mash potatoes . strain liquid from salmon, put in bowl and mash with fork. Remove bones. Add potato parsley lemon juice salt and pepper and enough beaten egg to bind. Make into round shapes dip into beaten egg and then into breadcrumbs. Fry in hot oil.
Quick recipe make up one packet of instant mashed potato with onion, cool add drained salmon shape into patties dip in egg and breadcrumbs and fry
