SHOW-OFF STRAWBERRY BONBONS
"Use these colorful bonbons to decorate birthday cakes and holiday fruit cakes."
FOR THE STRAWBERRIES:
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk
4 cans (3 1/2 oz. each) flaked coconut (3 3/4 cups)
2 packages (3 oz. each) strawberry flavored gelatin, divided use
1 cup ground blanched almonds
1 teaspoon almond extract
Red food coloring
FOR THE HULLS:
2 cups sifted confectioners' sugar
1/4 cup heavy (whipping) cream
Green food coloring
TO MAKE STRAWBERRIES:
In large bowl, combine sweetened condensed milk, coconut, 1/3 cup (dry) gelatin, almonds, extract, and enough red food coloring to tint mixture a strawberry shade. Chill until firm enough to handle.
Form small amounts (about 1/2 tablespoon) into strawberry shapes. Sprinkle remaining gelatin into flat dish; roll each strawberry to coat. Place on waxed-paper-lined baking sheet; refrigerate.
TO MAKE HULLS:
Combine sugar, cream, and green food coloring. Using pastry bag with open star tip, pipe small amount atop each strawberry.
Cover; refrigerate if storing more than several days.
Makes about 2 1/2 pounds or about 60 candies
