Hello Buffy, I found this recipe in a Taste Of Home Cookbook, and have been making this for many years. Very delicious!!
HOMEYS MEATLOAF
1 1/2 lbs. meatloaf mix (ground veal, pork and beef) - you may also use just beef
1/2 cup ketchup
1/3 cup tomato juice
1/2 teaspoon each salt and pepper
1/8 teaspoon red pepper (optional)
2 eggs, beaten
1/4 cup finely chopped onion
2 teaspoon mustard (yellow)
little bit of chopped green pepper
3/4 cup fresh bread crumbs (take about 5-6 pieces of bread together, and put them under the spigot to get them a bit wet, then squeeze water from them, break into pieces into your bowl with above ingredients, may take a bit more bread, you don't want your mix to be real mushy, but you dont want it dry either)
FOR THE TOPPING:
1/4 cup ketchup
1/2 teaspoon mustard (yellow)
2 teaspoon brown sugar
In large bowl, combine ketchup, tomoto juice, salt/pepper, beaten eggs, bread crumbs, onions and mustard. Mix until well blended, then add your beef mix. Line a 9x5 loaf pan with foil and press with beef mixture.
In a separate bowl, combine topping ingredients, mix well, and spread on meatloaf, top with sliced green peppers.
Bake 400 degrees F bout 45 minutes (maybe an hour) .. take out of oven and let it sit for about 15 minutes. you might want to drain some of the juices before letting it sit a bit. Enjoy!!
