Recipe(tried): Smothered Chicken with Buttered Noodles

Smothered Chicken with Buttered Noodles, peas, sliced tomatoes & for dessert Butterscotch Cake. Good morning, hope everyone is doing well! Boy, lots of great recipes are being posted I cant wait to try them! On this smothered chicken, it doesn't make much sauce so I double the ingredients for it. For the chicken I use boneless, skinless. I slice the chicken diagonally after cooking & serve over wide egg noodles.

4 servings

4 chicken breasts
1/2 cup all purpose flour
1/8 tsp. cayenne pepper
1/2 tsp. paprika
salt and pepper to taste
1/4 cup vegetable oil
1 onion (I use very small one)
2 small garlic cloves
1 cup sour cream
1/2 cup chicken stock
1/4 cup chopped green onions,including green parts

Clean chicken breasts & dry well. In a shallow baking dish, combine the flour, cayenne pepper, paprika, salt & pepper. Dredge chicken breasts in flour mixture to coat. Shake off excess. In large skillet heat 1/4 inch oil over medium heat. Add chicken & brown well, about 2 minutes on each side.

Remove from pan & set aside. Pour excess oil from pan, leaving a thin layer. Add onions & garlic, saute, stirring occasionally until translucent, about 3-5 minutes. In a bowl combine sour cream & chicken stock & green onions & mix well. Transfer chicken back to skillet, pour sour cream mixture over it. Bring to a simmer & cook, covered, until done, about 10 minutes.
