South-of-the-Border Cheese Soup
Yield: about 6 servings

1 (10 oz.) can water packed chicken, drained
1 lb American Cheese, cubed (I like low-sodium Velveeta)
1 can whole kernel corn, drained
1 can chopped green Chiles and tomatoes (Ro-Tel)
1 tiny can chopped green chiles, drained
1 can chicken broth
1 can chili beans
crushed tortilla chips, sour cream, guacamole; optional garnishes

Pour everything together in a large soup pot, heat on medium, stir occasionally, till cheese is melted and soup is hot! Top with crushed chips, sour cream, and guacamole.
