Recipe(tried): Spinach Ricotta Pizza (serves one) (WW pts=4)

4 Points
1/2 (5 oz) of a (10 oz) package of chopped spinach
1 large Pita
1/4 cup of Ricotta Cheese
2 thin slices red onion
2 Tbsp. Shredded part skim Mozzarella Cheese
Thaw spinach and squeeze dry.
Spread pita with ricotta cheese to within 1/2-inch of edge
Top with spinach, onion, and part skim mozzarella cheese.
Bake at 350 degrees in toaster oven until Pita is crisp and cheese is lightly browned, about 5-6 minutes.
I was thinking that you could use Broccoli and maybe some chicken. You would have to adjust the points though.
