This Receipe is over 100 years old from East Tennessee:
TENNESSEE STACK CAKE
1 cup sorghum molasses
2 eggs
4 cups uncooked dried apples
brown sugar to tast
2 tea. cinnamon
1 tea. vanilla
5 cups plain flour
1 cup shortening
1/2 tea. salt
1/2 cup buttermilk
Cream molasses and shortening till fluffy; add eggs, one at a time, beat well after each one.
Sift dry ingredients and add to creamed mixture alternatly with buttermilk. it will be like sugar cookie dough. Chill a while and it will roll out better.
Roll out on floured surface very thin, cut into 6-inch circles, place on lightly greased cookie sheet or lightly greased round cake pan.
Bake in preheated oven at 350 degres F for 7-9 minutes.
Stack with cooked apples, they will be like applesauce, between each layer.
Will taste better if made ahead of time and allowed to sit awhile.
