Recipe(tried): The Best Potato Salad

THE BEST POTATO SALAD

5 lbs red skinned potatoes, cut in half, then cut into 1/8 inch slices
1 1/4 cup mayonnaise
3 tbsp rice wine vinegar
3 tbsp fresh lemon juice (must be fresh, not bottled)
5 scallions, thinly sliced (white and green parts)
1/4 cup chopped fresh parsley
2 tbsp chopped fresh dill
1 tbsp salt
3/4 teaspoon of pepper

Place potatoes in pot and cover with salted water. Cook to tender about 20 minutes. Drain and cool slightly.

Add scallion, parsley and dill to potatoes.

Combine mayonnaise and lemon juice, salt and pepper in separate bowl. pour over potatoes and toss to coat.
