Recipe: Wheat free and corn free recipes - gluten content

Watch your diet carefully when you have allergies. Everything that you eat must conform to your diet or you will make yourself sick and cause damage to yourself.
The cereals containing gluten are wheat, barley, rye, oats, and spelt or their hybridised strains.
Some of those recipes previously mentioned are not suitable. Baking powder, vanilla, oils, etc etc must be gluten and corn free. Your health-care professional should have issued with a guide to eating.
Use the SEARCH function to check for previously posted recipes:
Yeast Free Black Bread
2 cups of white rice flour
2 cups of soy flour
1 1/2 cups of buckwheat flour
1 cup of gluten-free rice krispies type cereal
3 tsp. salt
8 tsp. baking powder
3 Tb. cocoa
4 Tb. white sugar
4 Tb. veg. oil
2 Tb. molasses
6 eggs
2 cups of barely warm coffee
1 1/2 cups water
Measure flours, cereal, salt, baking powder, cocoa and white sugar into a large bowl and mix. Add the oil, molasses, eggs and coffee and continute mixing. Add the water and mix until well blended.
Grease two bread pans and divide batter between them. Bake in a preheated 350 degree oven for 40-50 minutes or until done. Yield: 2 loaves. CLAN THOMPSON CELIAC SITE
Pita Bread
1/2 cup warm water
4 tsp. dry yeast granules
2 tsp. sugar
2 cups of brown rice flour
1/4 cup sugar
2/3 cup dry milk
2 cups tapioca flour
4 tsp. xanthan gum
1 1/2 teaspoons salt
1 1/2 cups water
4 Tb. oil
3 eggs
In a small bowl, combine: water yeast & sugar Set aside and let stand for 15 minutes. Meanwhile, combine the dry ingredients in a large bowl: Mix the wet ingredients in a small bowl. Add the the wet ingredients and the yeast to the large bowl. Beat on high for two minutes. Grease three cookie sheets. Each cookie sheet will hold two loaves. Place dough for one loaf on the cookie sheet and flatten into a circle. (Flour your hands with brown rice flour). Repeat until dough is gone. Bake immediately for 15 minutes without allowing the dough to rise. Remove from cookie sheet and cool. Cut loaves open as soon as possible after cooling. Makes 6 pita loaves. Shortbread
1 cup butter
1/2 cup white sugar
1 tsp. xanthan gum
1/4 tsp. salt
1 cup rice flour
1/3 cup bean flour
Cream butter, add sugar gradually and cream together until light and fluffy. Work in flour and salt, using fingertips. (NOTE: If necessary, you can add more flour). Press evenly into 9x9x2 inch pan and prick with fork. Bake in a slow oven (300 degrees) for about 50 minutes. Cool slightly and cut. CLAN THOMPSON CELIAC SITE
Tapioca bread with cheese (P o de Queijo)
2/3 cup vegetable oil
2 cups milk
4 cups tapioca flour
2 eggs, beaten
1 1/2 cups grated parmesan cheese
Combine the oil and milk in a pan and bring to a boil. Put the tapioca flour in a bowl, add the boiling mixture and mix well with a wooden spoon. Add the beaten eggs and mix well. Add the parmesan cheese and mix well again. Let the mixture stand for 10 minutes. Put a little oil on each of your palms and make small balls, 2 inches in diameter, (make sure when forming the balls that your hands are always lightly oiled). Place on a buttered baking sheet and bake in a 350 degree oven for about 20 minutes or until the top is light brown.Makes 30 small cheese breads.
