ISO: Enchiladas Suizas

I am looking for a recipe for Enchiladas Suizas - it is a Mexican dish using chicken enchiladas and a tomatillo sauce. It seems like it would be an easy one, but everytime I have them at a restaurant, they are so moist. How do they do it?
