ISO: German Chicken Soup and Hot and Sour Soup

The most delicious chicken soup I ever ate was while visiting at the home of a German relative in Rhine, Germany. I have asked for the "how to make it", but something gets lost in the translation. Will somesome help me? It was so clear that you could see to the bottom of the bowl and the chicken pieces where NOT chopped, but left whole like a drumstick. Marvelous! Please help me if you can.

Also, should an oriental cook be reading this, I would like to be able to fix Hot and Sour soup. My husband and I both enjoy this also.

Help would be appreciated. Thank you..DRK
