Are you referring to the Mandarin Orange Cake. This site has several recipes in the archives for this cake and variations. Its frosting is made up of pudding mix, whipped cream and pineapple. It is made with a yellow cake mix with a can of mandarin oranges in the cake batter. I hope this helps. By the way, it is also name Pea Picking Cake in some cookbooks.
