ZARDA BARBECUE BAKED BEANS
From Zarda Bar-B-Q Restaurant, Kansas City, Missouri.
2 sheets (12x12-inches each) Reynolds Wrap Heavy Duty Aluminum Foil
1 (28 oz.) can pork and beans
2 tablespoons chopped onion
1/4 cup packed dark brown sugar
1/2 cup Zarda Kansas City Classic Barbecue Sauce (recipe follows) (or your favorite barbecue sauce)
4 slices bacon, cooked and crumbled
Preheat grill to medium. Make a Reynolds Do-It-Yourself (DIY) Foil Grill Pan (see tip below).
Combine pork and beans, onion, brown sugar, barbecue sauce and bacon in DIY Grill Pan (see tip below) with a wooden or plastic spoon. Slide pan onto grill rack.
Grill 10 to 15 minutes in covered grill, stirring occasionally, until beans come to a boil. Slide foil pan from grill onto a cookie sheet.
TO MAKE A REYNOLDS DO-IT-YOURSELF (DIY) FOIL GRILL PAN:
Stack two sheets of Reynolds Wrap Heavy Duty Aluminum Foil. Flip a pan upside down. Press sheets of foil around pan. Remove foil from pan and crimp ends. Place DIY Foil Grill Pan on a tray to transport to and from the grill.
ZARDA KANSAS CITY CLASSIC BARBECUE SAUCE
Makes 8-10 servings
1 (6 oz.) can tomato paste
1 1/2 cups water
1 cup white vinegar
1 bottle (6 oz.) your favorite dry barbecue seasoning blend
1 cup sugar
1 tablespoon cornstarch
1 to 2 drops liquid smoke
Salt to taste
Combine all ingredients for the sauce in a medium saucepan.
Cook over medium-high heat 5 to 10 minutes, stirring occasionally, until sauce is bubbling and slightly thickened.
Makes 4-6 servings
