ISO: Need recipe for Boneless Turkey, Duck, Chicken, Cornish Hen Roll

I am searching for the recipe for Stuffed Boneless Turkey, Duck, Chicken,Cornish Hen Roll. This recipe was featured on a PBS cooking show hosted by Jacque Pepin. I am not having any luck looking for it in any of his cook books which I have access to or online, where I have been researching. I would really like to share this meal with my Parents when I visit them in Texas, for Thanksgiving, this year. If anyone out there has any info regarding this recipe, please respond to me. If not this recipe, then any of the above mentioned Poultry( boneless and rolled would do as well. I am very good at deboning Poultry but I need the method of cooking and the weights as well as the time and temp. needed to keep the roll moist.

As a personal note, I will add that my Parents are now advanced in age and would love to enjoy a lovely elegant dinner where they would not need to tear the meat off the bones....lol...
