Carolyn, I find hominy with the other canned beans (Goya brand) in my grocery store. It's often on the lowest shelf - I guess due to lack of popularity. I love the stuff!

When I was growing up, my mother would drain hominy and fry it, with salt and pepper, in bacon grease to have as a side dish with hamburgers. Yep. Bacon grease!! I have to say that it did give the hominy a wonderful flavor. To this day, I like it prepared that way. You just have to be careful when you fry it since it tends to make the grease spatter. I'm not sure why but maybe because it's still a bit damp even with careful draining.

Also, I ran across a recipe from Terry/Texas on this site that uses hominy in a Mexican style casserole (Tex Mex Hominy). She served it with Grilled Pork Chops with Poblano Cream Sauce. I've made both recipes twice and both are very good.
