I would like to find a Tortilla soup recipe that is close to the
recipe that "Baby Acapolco's" uses. (This is in Austin, TX)

Tortilla Soup

1 dried ancho chili
1/4 cup oil
4 corn tortills -- cut in 1" pieces
1 large onion -- chopped
1 medium green pepper -- chopped
3 cloves garlic -- minced
4 cups chicken broth
1/2 tsp cumin
1/2 tsp pepper
2 tomatoes -- unpeeled and chopped
2 tbl fresh cilantro
1 tbl fresh parsley

Remove stems andseeds from chili; saute in hot oil in Dutch oven until soft. Remove chili and chop, reserving oil. Fry tortilla pieces an drippings until brown. Remove and drain. Reserve drippings. Saute onions, pepper, and garlic until tender. Add broth, cumin, and pepper. Bring to a boil, cover, reduce heat and simmer 20 min.. Stir in reserved chili and tomatoes; simmer 10 min. Before serving, stir in chopped cilantro and parsley. To serve, place tortillas in individual bowls reserving one-fourth of the pieces, and add soup. Top with reserved chips. Makes 6 cups
