MIX-EASY CAKE
1/3 cup vegetable oil
2 ounces semisweet chocolate (or see variations below)
3/4 cup coffee (or liquid of choice, see variations below)
3/4 cup sugar
1 egg
1 1/4 cups flour
1/2 teaspoon baking soda
1/2 cup shredded coconut (or see variations below)
1/2 cup chopped pecans (or see variations below)
Preheat oven to 350 degrees.
Heat oil and chocolate in an 8-inch square nonstick pan in the oven for 2 minutes.
Remove pan from oven and stir chocolate-oil mixture with a fork until smooth. Add coffee, sugar, egg, flour and baking soda. Stir together until smooth about 2 minutes. Stir in coconut and pecans, reserving some to scatter over top.
Bake for 30 minutes or until toothpick inserted comes out clean. Cool.
*VARIATIONS:
Use what you have in same or similar amounts:
- 2 ounces unsweetened chocolate, water, chopped walnuts and semisweet chocolate chips
- 2 ounces white chocolate, orange juice, chopped almonds, chopped dried apricots and a spoonful or orange peel
- 1 cup butterscotch chips, water and chopped walnuts.
