Chicken Noodle Parmesan
Campbell's No Time To Cook Recipes
Makes about 4 1/2 cups or 4 servings

3 cups dry medium egg noodles
1 can (10 3/4 ounces) Campbell's condensed Cream of Chicken Soup
1/2 cup milk
1/3 cup freshly grated Parmesan cheese
1/8 tsp. freshly ground black pepper
2 cups cubed cooked chicken (or turkey)

In 3 quart saucepan, prepare noodles according to package directions. rain in colander.

In the same saucepan, combine soup, milk, Parmesan cheese and black pepper (plus onion salt, Italian seasoning and extra pepper, if desired); add noodles and chicken. Over low heat, heat through, stirring occasionally.

Can be sprinkled with chopped fresh parsley and additional Parmesan for garnish if desired.

Turkey and Leek Deep-Dish Corn Bread Pie

Corn Bread Topping:
3/4 cup white cornmeal
3/4 cup flour
2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 egg
1/2 cup milk
1 tablespoon melted butter
2 tablespoons chopped parsley and chives

Filling:
4 leeks -- trimmed and washed
6 tablespoons butter
6 tablespoons flour
1 1/2 cups turkey or chicken broth
1 1/2 cups milk
salt
fresh ground pepper
1/8 teaspoon fresh nutmeg -- grated
4 cups cooked turkey -- cut into chunks
1/4 cup heavy cream

Toss the cornmeal, flour, baking powder, sugar, and salt together. Beat the egg and add the milk and melted butter. Mix the dry and wet ingredients together, and stir in the herbs. Butter an 8 or 9-inch pie plate(it should be the circumference of the casserole you will use for the turkey base) and spread the corn bread batter evenly into the pan. Bake in a preheated 400F oven for 20 minutes. In the meantime, cut the leeks into 1/2-inch pieces and cook in water to cover until just tender. Prepare the sauce: Melt the butter in a heavy saucepan, add the flour, and cook slowly for about 2 minutes over low heat, stirring. Off heat, whisk in the broth and milk, return to the heat, and cook, stirring constantly, until thick and smooth. Season with salt and pepper to taste and nutmeg. Fold in the turkey meat, the leeks with a little of their cooking juices, and the cream. Heat through. Place the turkey filling in an ovenproof casserole about 8 inches in diameter. When the cornbread is done, carefully remove it from the pan and place on top of the turkey filling. Return the casserole to the oven and bake 5-10 minutes until bubbling.

Turkey and Wild Rice Chowder

Serves 8

1 cup uncooked wild rice
2 1/2 cups water
2 tbsp. vegetable oil
1/2 lb. medium white mushrooms, trimmed and sliced
1 medium onion, coarsely chopped
1 or 2 celery ribs, coarsely chopped
1/2 cup coarsely chopped red bell pepper
2 large garlic cloves, minced
4 cups turkey broth
1 tbsp. chopped fresh basil or about 1 tsp. dried
1/2 tsp. dried rosemary leaves, crumbled
1/2 tsp. salt
1 stick butter (1/2 cup)
1/2 cup all-purpose flour
2 cups milk
1 cup cubed cooked turkey dark meat

In a fine sieve, rinse wild rice under cool running water. Bring water with a little salt to a boil in a medium saucepan. Stir in rice and return to boiling. Reduce heat to low, cover pan and barely simmer rice for 55 minutes, or until most of liquid has absorbed. Remove from heat and set aside.

Heat 1 tbsp. oil in a 4 qt. Dutch oven or other large, heavy pan. Add mushrooms and cook over high heat, stirring and tossing, until they are lightly browned and all their liquid has evaporated. Remove mushrooms from pan and set aside. Heat remaining oil in same pan. Add onion, celery, red bell pepper and garlic and cook over medium-heat, stirring until tender. Return mushrooms to pan. Stir in broth, basil, rosemary, and salt. Bring to a boil. Reduce heat to medium low.

Melt butter in a medium saucepan over medium heat. When hot, stir in flour and cook, stirring constantly, until bubbly. Gradually stir in milk. Add flour mixture to soup, whisking until blended and smooth. Stir in rice and turkey meat and cook over low heat, stirring frequently, until soup thickens and is heated through.

Cinnamon Bread:
Add 3/4 tbsp cinnamon to the dry ingredients, then add 1 tsp cinnamon mixed into 1 tbsp of sugar when the electronic timer beeps 10 times. After brushing the top of the finished loaf with melted butter, dust the top of it with additional cinnamon/sugar mixture.

Applesauce Bread:
Substitute 1/2 of the water with a like amount of any CHUNKY style applesauce. After brushing the top of the finished loaf with melted butter, dust the top of it with additional cinnamon/sugar mixture.

Maple Walnut Bread:
Substitute 2 tbsp DARK maple syrup for a like amount of water and add 1/4 tsp maple flavoring to the water. Add 1/2 cup finely chopped walnuts to the pot when the electronic timer beeps 10 times.

Raisin Apricot Cinnamon Bread (bread machine)

2 teaspoons vital gluten -- * see note
1 tablespoon wheat germ
2 tablespoons sugar

1 tablespoon margarine
2 teaspoons ground cinnamon

1/4 cup dried apricots

* Vital gluten can be found at health food stores and at some grocery stores. It helps to make the bread rise and gives it a tender texture.

Chop the apricots into small pieces, or use dates if you prefer. Place
all ingredients except raisins and apricots (or dates) into your breadmaker following manufacturer's directions. Add the raisins and apricots at appropriate time; in a Zojirushi and most other breadmakers, there is an option for raisin bread that will allow the machine to beep when it is time to add additional ingredients.

Cranberry Nut Bread (bread machine)

4 oz orange juice
1/4 cup butter
1 large egg
2 cups flour
3/4 cup sugar
1 tbsp grated orange peel
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup coarsely chopped cranberries
1/2 cup chopped nuts (i use pecans)

Have all ingredients at room temperature. Measure orange juice, butter and egg into the bread pan. In a medium mixing bowl, combine remaining ingredients except cranberries and nuts. Add this mixture to the bread pan. Then add the cranberries and nuts. Set on the setting for quick breads.

I recently got a welbilt breadmaker from a yard sale. It did not have instructions. I have looked at the recipes on this web page, however, I am confused about some things. For example, how do you knopw when the bread is done. Does the machine beep, does it turn off. What is the usual time it takes.

I just had a question in regards to the Welbilt raisin bread recipe post. I have an older model ABM 2100 that doesn't have a beep setting for adding extra ingredients like raisins or nuts. How will I know when to add these? Thanks! I am also looking for any other great bread recipes for this machine.

Here is some information for you:

One packet of active dry yeast equals 1/4 ounce (7 grams) or 2 1/4 teaspoons.

YEAST FRESHNESS TEST
If you are unsure about the freshness of your yeast, use the following test to determine its activity.

Using a one-cup liquid measuring cup, dissolve 1 teaspoon of granulated sugar in 1/2 cup warm tap water at 110-115 degrees F.

Using a thermometer is the most accurate way to determine the correct liquid temperature. Any thermometer will work as long as it measures temperatures between 75 and 130 degrees F. If you don't have a thermometer, the tap water should be warm but NOT hot to the touch.

Stir in one 1/4 oz. packet (7g) or 2-1/4 tsp of dry yeast until there are no more dry yeast granules on top. Yeast should be at room temperature before using.

In three to four minutes, the yeast will have absorbed enough liquid to activate and start to rise. After ten minutes, the foamy yeast mixture should have risen to the 1-cup mark and have a foamy rounded top. If this is true, your yeast is very active and should be used in your recipe immediately.

Remember to deduct 1/2 cup liquid from the recipe to adjust for the water used in this test.

If the yeast did not rise to the 1-cup mark, your yeast has little or no activity. Discard this yeast.

A regular package of dry yeast is 2 1/4 teaspoons. I can't help you to know when the yeast is old though. I only know it doesn't raise the bread as well.

I, too, acquired a Welbilt machine without directions, but I found directions (manual) online. You asked how you know when bread is done. The manual says the air removed for 20-30 minutes, and then a beep sound indicates baking is completed. On the timed cycle, it says the clock display returns to show the current time of day when done. Hope this helps.

The recipe on here says to select medium then press start.
My welbilt (bread machine) doesn't have a medium so I just selected normal and then I pressed start. Is that okay?

The medium setting in a bread machine recipe is referring to the loaf size options on some bread machines. If a machine has a medium setting it will bake a small, medium or large loaf. If your machine doesn't have settings for loaf sizes then it probably makes a small (1 pound) loaf. Here are the flour amounts for some of the different sizes:

BREAD MACHINE LOAF SIZE
maximum flour + dry ingredients:
1 pound - 2 to 2 1/2 cups
1 1/2 pound - 3 to 3 1/2 cups
2 pound - 4 to 4 1/2 cups

If you've already mixed the dough, you can remove about a third of it before baking the rest in the bread machine (you can shape, rise, and bake the dough you removed and bake it in the oven). Or you can remove all the dough from the machine, shape it and place in a loaf pan or make a round loaf, rolls or even pizza crust, let it rise, then bake it like you would bread in the oven.
