TOASTED ALMOND WHITE CHOCOLATE TRUFFLES
"These white chocolate treats are perfectly accented with toasted almonds and almond liqueur. The name "truffle" comes from the famous fungus with a similar shape - but all you'll think of is their sweet almond flavor when you eat them."
1 1/2 cups white chocolate chips
1/2 cup heavy whipping cream
1 cup almonds, toasted and finely chopped
1 tablespoon almond liqueur
Confectioners' sugar for dusting
In a double boiler over simmering water, melt chocolate with the heavy cream. Stir to blend well.
Remove from heat. Stir in almonds and almond liqueur. Refrigerate until thick enough to roll into balls, about 3 to 4 hours.
WHEN READY TO SHAPE:
Dust fingers with confectioners' sugar. Roll dough into 3/4-inch balls. Roll into confectioners' sugar. Place on a parchment-lined cookie sheet. Refrigerate until serving.
